Frittata Ranchera with Black Beans
Serves 4
Ingredients:
- 6 large whole eggs plus 2 large egg whites
- 1/4 cup fresh flat-leaf parsley, finely chopped
- Coarse salt and freshly ground pepper
- 1 tbs. extra-virgin olive oil
- 1 onion, finely chopped
- 1 1/2 cups grape or cherry tomatoes, halved
- 2 jalapeƱo chiles, finely chopped
- 1/4 cup crumbled fresh goat cheese
- 1 can (15 oz.) black beans, drained and rinsed
Instructions:
- Heat broiler. Whisk all eggs, parsley, 1/2 tsp. salt, 1/4 tsp. pepper together in a large bowl.
- In an ovenproof skillet, heat oil over medium. Add onion, tomatoes, and jalapeƱos. Cook until onions soften, stirring occasionally, about 6 minutes. Add egg mixture and sprinkle cheese over the top. Cover and reduce heat to low. Cook for about 5 to 7 minutes or until eggs are almost set.
- In a small saucepan, heat beans over medium-low until warmed.
- Uncover skillet and put frittata under broiler for 3 to 4 minutes or until the top is set and beginning to brown.
- Cut into wedges and serve with black beans.
